Egg Roll in a Bowl for Lazy Girls

I’m a big fan of lazy recipes with minimal work. This recipe takes less than 20-minutes to make and tastes delicious as leftovers. This Lazy Girl Egg Roll in a Bowl recipe is savory, sweet, and very easy to make.

There’s no harm in using pre-packaged or pre-prepped products! If it saves you time and energy, it’s 100% worth it. Convenience plays a huge part in our lives that helps us out.

Recipe: Egg Roll in a Bowl

Prep/Cooking Time: 20 minutes

Yields: 4-5 servings

Ingredients:

  • 1/2 c soy sauce

  • 2 T sesame seed oil

  • 2 T rice vinegar

  • 2 1/2 T garlic (or 5 garlic cloves)

  • 1 t ground ginger

  • 1/2 t Chinese 5-spice

  • 8 green onions

  • A splash of olive oil

  • 1 lb. ground turkey (or chicken or beef)

  • 1 package of dry broccoli or coleslaw

  • Optional: White rice

  • Optional: avocado slices, fresh cilantro, black sesame seeds, sriracha, or sweet n sour sauce

Instructions:

  1. Mix and whisk 1/2 c soy sauce, 2 T sesame seed oil, 2 T rice vinegar, 2 1/2 T garlic (or 5 cloves), 1 t ground garlic, and 1/2 t Chinese 5-spice in a bowl.

  2. Slice 8 green onions & add them to olive oil in a pan. Sauté on medium-low heat.

  3. Take 1 pound of ground turkey (or chicken or beef) and sauté in the same pan as the green onions on medium-heat.

  4. Add 1 package of dry broccoli or coleslaw to pan and sauté until desired texture consistency (I like mine a little crunchier).

  5. Add sauce mixture over top and serve hot!

  6. Optional: Pair with white rice to add some delicious carbs.

  7. Optional toppings: avocado slices, fresh cilantro, black sesame seeds, sriracha, or sweet n sour sauce
